Crispy grain and nut bars, sweetened gently with barley malt


The recipe below, courtesy of Eden Foods, is a good example of a healthy dessert that is sweetened with the gentle sugar substitute barley malt.

Crispy Grain and Nut Bars

Ingredients:

1/4 cup Eden Organic Barley Malt Syrup

1/4 cup organic maple syrup

1/4 cup dried cherries, blueberries or cranberries chopped

1/4 cup roasted pumpkin seeds

2 cups organic crispy brown rice cereal


Directions:

-Place the barley malt and maple syrup in a saucepan and bring to a boil while stirring constantly.

-Reduce the flame to low and simmer for 5 minutes until the syrup thickens.

-Place the crispy cereal, dried fruit and seeds in a mixing bowl.

-Pour the hot syrup over the mixture and mix thoroughly to coat all ingredients.

-Lightly moisten a glass baking dish with cold water. Place the mixture in the baking dish and press it down firmly.

-Place the dish in the freezer for 20 to 30 minutes, allowing the syrup to harden.

-Remove and slice into bars.


Barley malt syrup is readily available in most health food stores under the Eden Organic label.
