Happy almost Halloween! While Halloween is supposed to be the scariest night of the year, I think we all associate the holiday with CANDY! And while there are plenty of dessert recipes to use up the leftover candy (Leftover candy? Who has leftover candy??) this recipe focuses on the creepier aspect of the holiday.
First, begin with making your favorite cupcake recipe. Mine is top secret, so I won't be sharing that, but any cake recipe will work. You'll also need vanilla frosting. While I feel store bought frosting is not as good as homemade, either will work for this dessert.
After your cupcakes have cooled, slather them with the vanilla frosting. You want to make it as smooth and flat as possible.
Now take a green Gummy Lifesaver and place it in the center. You can use the regular, hard version, but then you'll have to suck on the candy after you eat the cupcake.
Place a chocolate chip upside-down in the center of the Lifesaver. This is the pupil.
Now for the fun part! Take red gel and make squiggly lines all over the frosting. This will make the eyes have a blood-shot look to them.
And there you have it! Creepy Eyeball Cupcakes! A fun project for kids or a great treat at a Halloween party!
