
This is a simple casserole you can throw together on a busy night. Stock up on Campbell's soups when they go on sale at the grocery. That way you can easily toss some ingredients together and have a hot dinner on the table in 30-40 minutes or so!
Creamy hamburger casserole
1 lb. lean ground beef, turkey or chicken
1/2 cup chopped onion
1 can cream of chicken soup
4 oz cream cheese (half of a bar)
1/4 cup milk
1 tube buttermilk biscuits
1/2 cup shredded cheddar
Brown the hamburger and add the onion when the meat is almost cooked. Drain the grease and rinse. Add the soup, cream cheese and milk. Stir well and pour into a greased 8x8" casserole.
Open the biscuits and arrange around the outside of the dish (see slideshow). Bake at 375 degrees for 25-30 minutes or until casserole is bubbly and the biscuits are golden brown. Top with cheddar.
As you can see, I baked this in my Ginny's electric roaster. This works like an extension of my oven, I am able to bake casseroles just like an oven!

Yummy! This would probably be good with some hash brown potatoes added!
Feeding that much fat and sodium to kids is why we're a nation of sick people. With all we know now, I don't understand why people still cook this way. You'd have to serve about 10 pounds of vegetables to compensate for the refined flour, fat and meat.
Owen: Thanks for your opinion! But I do like to cut corners and start with creamed soups every now and then on a busy night. IMO that is better than take-out for my family.
Bobbi: You're right, that would be very yummy! You could even stretch into a 9x13" casserole that way. Great idea!
I made this last night for my husband and I and we both LOVED it! I was in a hurry and happened to have everything on hand for the recipe. I'm so glad we tried it!
I enjoy recipes that are quick and can be made at home on the busy nights we all have. It's MUCH better than hitting a fast food restaurant.
