Creamy and cool condiments accentuate summertime California’s crisp and refreshing flavors nicely. Even some of the simplest old fashion eats that exhibit these cool, creamy and crisp characteristics taste especially wonderful on a summer afternoon in a friend’s back yard. While typically iceberg lettuce and ranch dressing seem like more of a compromise than a choice - summer’s climate compliments them. There is something so cooling, comforting and kick back about having some thick wedges of crisp iceberg drizzled with some mediocre ranch dressing and scooping it up with some not so, " fancy pants," cheese pizza and washing everything down with a beer. So, it seems, this simple flavor combo of crisp, cool and creamy is so universally wonderful during summer, that we must celebrate it. To celebrate the concept means to look at it from all angles, day dream and scheme. Beginning from the most humble pizza/iceberg lettuce with ranch perspective and spiraling into whatever unique adaptation comes to mind. One creamy, cool and crisp day dream inspired this Creamy cilantro and jalapeño dressing. Perfect for dressing Latin influenced slaw and scooping up with warm corn tortillas.

Creamy cilantro and jalapeño dressing


2 cloves fresh garlic
½ cup fresh red onion diced
½ tablespoon jalapeño (diced and almost entirely de-seeded)
1 bunch fresh cilantro
½ cup olive oil
1 ½ cup low or nonfat Greek style yogurt
Juice of 5-7 fresh limes
¼ teaspoon cumin
Salt and freshly ground pepper to taste

Method of Preparation

Begin placing finely chopping the jalapeño, garlic and onion finely in the food processor. Next add the cilantro and pulse until chopped finely. Now add the remainder (though it’s a good idea to taste as you go with the limes because some limes are more juice; the quantity will depend) of the ingredients pulse until well blended and salt and pepper to taste.
