Creamy avocado pasta

1 avocado
½ lime
2 garlic cloves
¼ jalapeno
¼ cup basil
1 cup spinach
Salt and pepper to taste
2 tbsp. extra virgin olive oil
¼ cup Parmesan
1 lb. whole wheat spaghetti
1 cup spinach
Basil to garnish

Cook pasta according to package instructions in salted water. When draining, reserve 1 cup of the water the pasta was cooked in. In a bowl, add the spinach and hot spaghetti. Stir until the spinach has melted. Peel and pit the avocado. Zest the lime peel and juice the actual lime.

In a food processor, combine avocado, lime zest and juice, basil, garlic, jalapeno, wilted spinach, salt, and pepper. Blend until smooth to make the sauce. Pour the sauce over the spaghetti and stir well. Top with cheese and basil, then serve and enjoy.
