Sit back and enjoy this recipe that calls for simple ingredients and little prep time!
3 cups chicken, shredded (cooked)
¾ cup cream cheese, softened
1/3 cup sour cream
½ cup salsa
1 ½ cup sharp cheddar cheese
1 ½ cups baby spinach, chopped
Mix together all ingredients except tortillas. Season with salt and pepper to taste. Add a healthy scoop of the filling onto a tortilla and spread out in a line down the center. Roll up and repeat with the remaining filling and tortillas. Add a small amount of vegetable oil to a skillet and heat to a medium low temperature. Cook the taquitos slightly on each side, starting with the seam side down to seal in the filling. Set aside on a paper towel, then serve.
