Cranberry pistachio biscotti sticks

Who doesn’t love biscotti? Add in some cranberries and pistachios and it’s perfect for the holiday season!

¼ cup olive oil
¾ cup sugar
2 tsp. vanilla
½ tsp. almond extract
2 eggs
1 ¾ cups flour
¼ tsp. salt
1 tsp. baking powder
½ cup cranberries, dried
1 ½ cup pistachios

Preheat oven to 300º. In a mixer, combine oil, sugar, vanilla, and almond. Beat in the eggs one at a time. In a bowl, stir together flour, salt, and baking powder. Slowly add in to the mixer. Remove from mixer and stir in the cranberries and pistachios. Divide this dough into two equal parts. With wet hands (so the dough won’t stick to you), form two logs. Place on a baking sheet lined with parchment and bake 35 minutes. Once cool, cut into ¾ inch slices. Bake 8-10 minutes more.
