Craft cocktails: Smoking Herb at The Dram

We love searching out cocktails with Whoa!, and The Dram’s Smoking Herb made a big blip on our Whoa! radar. This sassy beverage is the brainchild of bar manager Ryan Payne, and it’s a funky escape, especially for its presentation. In one glass, Payne skilled hands pour a sour mix of Square One Botanical Vodka, Velvet Falernum, Luxardo Maraschino Liqueur, and lime juice. In another glass, he places a single rosemary sprig and douses it with Green Chartreuse. With the flick of lighter, the empty glass bursts into flame, courtesy of the oily liqueur, in a process that sears the rosemary sprig. In a darkened bar, it’s a breathtaking display, albeit a quick one; the flame is soon extinguished by the contents of the first glass. What follows is a refreshing assault on the senses. The smoked herb lends a chewy contrast to the delicate, grassy notes playing below. “Lots of places do sour drinks,” Payne says as he lords over the ceremony in the dark, his thick beard making him look like some kind of crazy wizard. “But theirs are usually sweet. This one is kind of dry.” It’s a cocktail experience unlike any other. But it won't be here forever; The Dram changes its cocktail menu up seasonally. One thing’s for sure, we can’t wait to see what Payne does next.
