Corn bread recipe: Easy, moist, and delicious

Everyone has their favorite corn bread recipe. Some like their corn bread sweet, some like it spicy, some like it flavored with meat, some like it baked on the stove, it could go on and on -- there are so many ways to make this perennial favorite. This particular recipe is based on a restaurant in upstate New York that makes its own amazing corn bread. It is sweet, moist, and has a little kick from a surprise ingredient. After the first bite you want to ask how it’s made, and the answer will surprise you!

Corn bread has been a part of many cultures for centuries. In the United States, it’s usually thought of as a Southern food. However, Native Americans used corn long before it was introduced to Europeans, so had their own way of making it into breads and other recipes. South America’s countries each have their own recipes for corn bread. And, of course, as with most things, it is vastly different from country to country and region to region. In the Northern United State, people tend to like their corn bread sweetened; in the Southern United States it’s flavored with meat drippings and has a saltier taste and different texture.

This corn bread recipe is moist and has a bit of a kick – enjoy!

Creamy Corn Bread Recipe

Ingredients for Creamy Corn Bread Recipe:

  • 3 eggs
  • 1 cup sour cream
  • ½ cup oil
  • 1 8-ounce can creamed-style corn
  • 2 tablespoons sugar
  • ½ tsp. salt
  • 1 tablespoon baking powder
  • 1 cup yellow corn meal
  • 1 – 1 ½ tsp. cayenne pepper

Directions for Creamy Corn Bread Recipe:

Preheat the oven to 375 degrees. Grease a 9x9 baking dish.

Combine the eggs, sour cream, oil, and can of corn – mix well enough to incorporate all ingredients. Add the sugar, salt, baking powder and corn meal. Again, mix just well enough to incorporate all the ingredients -- do not over mix.

Pour the mixture into the prepared baking dish. Sprinkle the top of the mixture with the cayenne pepper – if you like spicy, use more; if you like a little less spicy, use less. Bake for 30 – 35 minutes. Cut into serving pieces and serve at once.
