Cooking with kids: frosted chocolate cookies

Some of the fondest memories we have of our childhoods are often of times spent in the kitchen cooking with our parents/grandparents, or, at the very least, being in the kitchen while they were cooking so we could lick the spoon afterwards.

Greg Pierce indicated this recipe for frosted chocolate cookies was the most requested cookie for his grandmother to make. It is a small drop cookie, he stated, one everyone will love. He also provided her frosting recipe which he said made these cookies so very special.

Ingredients for cookies:

  • 2 cups all-purpose flour
  • ½ teaspoons baking powder
  • ¼ teaspoon salt
  • 3 (1 ounce) squares unsweetened chocolate
  • 1 cup packed brown sugar
  • ½ cup butter
  • 1 egg
  • ¾ cup sour cream
  • ½ cup chopped walnuts
  • 1 teaspoon vanilla extract

Directions for cookies:

  1. Preheat oven to 350ᵒ F. Lightly grease cookie sheets.
  2. Sift flour, soda, and salt together.
  3. In the top half of a double boiler, melt the chocolate over low heat.
  4. Cream together brown sugar, butter, and egg in a large mixing bowl. Slowly mix in the flour mixture and mix until well blended. Pour in melted chocolate, sour cream, and vanilla. Mix well and stir in nuts.
  5. Drop dough by teaspoonful onto greased cookie sheet about 1 inch apart. Bake for 10 minutes. Cool on wire racks. Cookies will be soft and about the size of a half dollar.
  6. When cooled top with Chocolate Frosting.

Ingredients for chocolate frosting:

  • ¼ cup butter
  • 2 Tablespoons cocoa powder
  • 2 teaspoons instant coffee granules
  • 3 cups sifted confectioner’s sugar
  • 3 Tablespoons milk
  • 1 teaspoon vanilla extract

Directions for chocolate frosting:

  1. Melt butter over a low heat.
  2. Stir cocoa, coffee and vanilla into the butter.
  3. Mix in powdered sugar and milk.
  4. Beat until smooth.
  5. Frost cookies and enjoy.
