Cooking with broccoli

Broccoli is considered to be one of the healthiest edible vegetables. Nutrition experts call broccoli a "superfood." In one serving of broccoli, which is a bout one cup, there is only about 50 calories. A serving of broccoli contains over eighty percent of vitamin C. It also stores healthy amounts of vitamin A and B-6, lowers cholesterol and reduces digestive problems.

When cooking broccoli, it is best to use low-heat methods such as steaming and frying. High heat can destroy some nutrients.

Lemon zest broccoli

2 TBS olive oil

1 tsp salt

1 tsp pepper

1/2 garlic clove

1/2 onion, chopped (any kind)

1/2 broccoli head, serparated

1 lemon

In a skillet, heat olive oil over medium heat. Cut the broccoli florets in half. Add finely chopped onions, mashed garlic gloves, salt and pepper, Cook around 10-12 minutes until the onions begin to change color. Remove from heat. Juice one whole lemon and sprinkle juice on top.
