Don't be afraid to use spices-Fresh herbs and spices give your dish a bold flavor. By adding a little zest to your dishes, you can really spruce up a bland dish. Spices also allows you to use less salt with more flavor.
This foolproof, pan-seared halibut meal is simply divine. Seared, then placed on top of a bed of southwestern flavors is so simple and so good. Halibut is known for its delicate color and texture. It is also an excellent source of high quality protein and minerals. It's mild in flavor, absorbs flavor easily and cooks up quick. Make sure to not overcook the halibut (4 minutes on each side), the meat will start to flake off when you know it's done. The tomatoes are cooked alongside the fish in the same saute pan, soaking up all the juices from the fish and marinade. Layer the tomatoes on the bottom with some roasted corn and top with the beautiful charred halibut. Serve with some couscous for an amazingly simple and delicious meal.
Citrus Halibut over Grilled Tomatoes and Corn
Serves 2
Ingredients
Halibut Marinade
- 1/4 cup orange juice
- 1/4 cup lemon juice
- 2 tablespoon olive oil
- Freshly ground pepper
- 1 tablespoon honey (dissolved)
- 2 halibut steaks
- 2 large roma tomatoes
- 1/4 cup roasted corn kernels
- Cilantro
Directions
1. Mix all the ingredients of the marinade and let the fish marinade for at least 30 minutes-1 hour
2. Heat saute pan on medium high heat, spray with cooking spray
3. Slice tomatoes and layer around the side of the pan.
4. Cook halibut 4-5 minutes on each side, baste the fish with the leftover marinade (I ended up dumping in all the marinade and letting all the flavors meld together)
5. Layer tomatoes, corn, halibut on a plate and top with fresh cilantro. Enjoy!
