Cooking on the NBC Charlotte TODAY Show today at 11 am

Be sure to tune in to the WCNC website and watch us from The Presidential Culinary Museum and The Inn of the Patriots today as we cook our famed Grilled Swordfish with Vidalia Onion, Mango, Kiwi, Pineapple Salsa! (for the full recipe being made on NBC today).

I'm looking forward to serving it on President Thomas Jefferson's china, LIVE, on the set.

The show comes on daily at 11 am EST and the film clips will be available all day long at the NBC website.  We'll have more for you later and a unique story about swordfish in America.

Atlantic Wild Swordfish are Back:

"Atlantic Wild Swordfish tell a powerful story of how awareness and modern fishery management can turn a major challenge into a rousing success. Few people know of the significant sacrifices made by swordfish fishermen to rebuild this stock in less than a decade. Swordfish is one of the great accomplishments of fishery management, President Bill Clinton and Americas Chefs with great food, too.

In 1998, the United States Natural Resources Defense Council and SeaWeb hired Fenton Communications to conduct an advertising campaign to promote their assertion that the swordfish population was in danger due to its popularity as a restaurant entree. The resulting "Give Swordfish a Break" promotion was wildly successful, with 750 prominent U.S. chefs agreeing to remove North Atlantic swordfish from their menus across the country.

The advertising campaign was repeated by the national media in hundreds of print and broadcast stories. It earned the Silver Anvil award from the Public Relations Society of America as well as Time magazine's award for the top five environmental stories of 1998. Subsequently, the US National Marine Fisheries Service proposed a swordfish protection plan that incorporated the campaign's policy suggestions. Then-US President Bill Clinton called for a ban on the sale and import of swordfish and in a landmark decision by the federal government, 132,670 square miles of the Atlantic ocean were placed off-limits to fishing.

Twelve years later in the North Atlantic, the Swordfish stock was fully rebuilt, with biomass estimates 5% above the target level. "By working with our regional fishery councils and commercial and recreational fishermen, we are getting closer every year to ending overfishing in our waters," said Eric Schwaab, NOAA assistant administrator for NOAA's Fisheries Service. "With annual catch limits coming into effect this year, we expect our progress to accelerate."

Long prized for its tasty flesh - Atlantic Wild or ANY Swordfish is a shining example of a successful global conservation effort. Now is the time to support our swordfish industry by purchasing their catch. Rebuilding this stock is a conservation success for Americans, the Presidency and Chefs in America." (Sea to Table)
