Cooking humor behind the scenes at the Knoxville Cooking Examiner

Have you been enjoying the quick and easy recipes that you find here on the Knoxville Cooking Examiner?  You have, no doubt, discovered that your humble Examiner and friend is not a gourmet cook! I am, however, the self-acclaimed Queen of the Quick, Easy, and Cheap.

Every dish or recipe that I look at starts the wheels rolling in my head, trying to redo the dish in 15 minutes for less than $5.00! My kitchen is more like a lab than a gourmet kitchen; no, that's not quite right, either. My kitchen is more like the scene of a test flight. Picture your Examiner wearing an old fashioned leather flight suit and weird little goggles. 

Really, I probably should wear goggles! At least today, they would have been a good thing. Today, was one of those projects that would fall under the category of cooking disasters that I sometimes write about. Usually, the dish involved just tastes terrible. Do you remember these disastrous golden oldies:

Today's experiment went awry and could actually have been dangerous. I attempted to make a potassium and fiber rich snack mix for my own special health needs. I had used two little packets of the Chex Mix Seasoning, Worchestershire Sauce,  and margarine in the latest method where you use the microwave. I had microwaved the cheerios, peanuts, and croutons in the plastic storage container and dumped them into a larger container where I added a lot of popcorn to the Mix, eating as I went.

Never content to leave well enough alone, I also started chopping dried apricots to add, still eating as I went. While chopping, I decided some more Cheerios would be in order, and so I threw some margarine and cheerios in the same container and microwaved them for around 2-3 minutes while continuing to chop (and eat) the apricots.

Apparently,  I didn't watch closely enough. When the microwave beeped, I opened the door and reached in to get the container as burnt cheerios went everywhere. I realized there was a big hole burnt in the bottom! The smell of melted plastic is one of my faves, too. 

Yes, I had a nice clean-up job to do, but, of course, your Knoxville Cooking Examiner always takes time to snap pictures! Check out the accompanying slide show to see pictures of the actual Potassium snack mix and the mess.
