I love using a dressing as a marinade. It saves a lot of steps!
To make this easy recipe, find the ingredients at your local Meijer.
- 2 boneless skinless chicken breasts
- Asian style dressing (I used toasted sesame), divided
- fresh spinach
- mandarin oranges, drained
- toasted pecans
- Marinate chicken in a little dressing for a couple of hours. Drain. Grill or broil til chicken is no longer pink. Let rest a few minutes before slicing thinly.
- Meanwhile mound spinach on a plate. Top with sliced chicken, oranges and pecans and additional dressing.
