Heather Ridge Farm, Carol Clement’s omnivore haven in the Catskill Mountains, announced today the addition of monthly cooking classes to its roster of foodie-centric offerings. This month’s cooking class on Saturday, July 26, is “Everything Chicken,” emphasizing techniques to get the most from your chicken, including how to cut up a whole chicken, the best methods to cook each cut, and recipes. The class, which starts at 5:30 p.m., will include a dinner with the foods the class has cooked.
Heather Ridge Farm, at 989 Broome Center Road in Preston Hollow, NY, features animals lovingly grown in small groups on bucolic pastures without antibiotics and hormones. Virtually everything on the menu of their Bees Knees Café is grown or raised on the farm or sourced nearby.
The cooking classes are ably taught by Chef Rob Handel, previously executive chef at Blackthorne Resort, now filling that position at Heather Ridge Farm’s Bees Knees Café. Since joining the staff at Heather Ridge Farm this season, Chef Handel created an innovative approach to the “farm and forage to table” menu. He has also started monthly “Supper Club” events, on and off farm catering, and cooking classes. Each cooking class costs $50 per person, including dinner; reservations are required.
The wildly popular “Supper Club” is a five-course dinner featuring the meat and poultry of Heather Ridge Farm paired with the best of local produce. The next Supper Club will be August 9 at 7p.m. – again, reservations are required.
The next cooking class will be August 23, and concentrate on “Canning and Preserving.”
Heather Ridge Farm’s café and farm store are open every Saturday and Sunday from 11a.m. – 4 p.m., offering Animal Welfare Approved grassfed and pastured meats and poultry.
