Pasta! It seems everyone loves a good pasta dish and there is so much you can do with those lovely strands of Italian goodness. One of the great things about most pasta dishes is the fact they are quick and simple. Pasta is also very versatile. Just about anything goes well with pasta.

This particular pasta dish, Pasta Rustica, is loaded with the fresh flavors of Mother Nature. It also has a nice little dose of Italy to it with the addition of salami. It gets its name from the fact it is a very rustic dish to prepare. You can use any type of spaghetti type pasta to make this dish, but at Casa de Cuisine we do prefer to use the thin types of pasta. Firstly, they cook up quick and secondly, they match very well with the other ingredients as far as the overall texture of the dish is concerned.

For the salami to use in this dish, the best choice would be Italian dry salami.

Ingredients needed to make Pasta Rustica (serves 2):

  • 1/3 cup butter
  • 2 cloves garlic, minced
  • 2 zucchini, julienned
  • 1 cup sliced mushrooms
  • 1/4 cup minced salami
  • 1/4 cup olive oil
  • 1/4 cup shredded Parmesan cheese
  • 1/3 cup chopped basil
  • Cooked pasta


  1. In a medium saute pan, melt the butter over medium heat.
  2. Add the garlic and saute 1 minute.
  3. Add the zucchini and saute 5 minutes.
  4. Add the mushrooms and salami and saute 5 minutes.
  5. Remove the pan from the heat and add the cooked pasta with the olive oil, Parmesan cheese and basil. Toss everything to blend the flavors.
  6. Place onto serving plates and enjoy.
