Well, long story short, it’s hard to stop eating these wonderful cookies. The peanut butter flavor is just perfect and the texture is soft and rich. They are the absolute best peanut butter cookies – you need to look no further!
Handed down from another generation, this is one of those delicious recipes that is a treasure. The addition of the peanut butter chips is not in the original recipe, but makes them absolutely delicious. If you don’t have any peanut butter chips on hand, add chocolate chips or add no chips at all. The basic recipe is wonderful in and of itself.
The Best Peanut Butter Cookie Recipe
Ingredients for the Best Peanut Butter Cookies:
- 1 cup butter, softened
- 1 cup white sugar
- 1 cup brown sugar
- 1 cup peanut butter
- 2 eggs
- 1 tsp. vanilla
- 2 cups flour
- 2 tsp. baking soda
- ½ tsp. salt
- 1 cup Reese’s peanut butter chips
- Small bowl of white sugar for dipping
Directions for making the Best Peanut Butter Cookies:
Cream together the butter, white sugar, brown sugar, and peanut butter. Add the eggs and vanilla, and mix well. Stir together the flour, baking soda and salt, then add the flour mixture to the other ingredients. Mix together just enough to incorporate. Stir in the peanut butter chips. Refrigerate the dough for ½ hour prior to using.
Preheat the oven to 350 degrees. Form the chilled dough into 1-inch balls. Dip each ball into white sugar and place on an ungreased baking sheet sugar-side up. DO NOT FLATTEN!
Bake at 350 degrees for 8 – 9 minutes. (Cookies will just seem set – not browned.) Remove from the oven and let the cookies sit on the baking pan for 2 minutes prior to removing.
