I have had this recipe for years; an old boyfriend's mother made them for us all the time. This is a great soft and spongy cookie.

Find everything you need to make these at your local Meijer.

1/2 cup butter, softened
1 cup light brown sugar, packed
1 egg
1 t vanilla
1 1/2 cups drained, crushed pineapple
2 cups flour
1 t baking soda
1/2 teaspoon salt
raisins (optional)
nuts (optional)

Preheat oven to 350°.

Cream butter and sugar. Beat in egg, vanilla, and pineapple.

Sift flour, baking soda and salt together, and gradually add to creamed mixture. Add additional flour if mixture appears too wet.

Drop by teaspoons on a lightly greased cookie sheet; bake 10-12 minutes or til just starting to brown. Do not overbake.

Cool on the pans then transfer to a tightly covered container.
