Cookie Dough recipes: Cookie Cupcakes and Cookie Dough Cheesecake Bars

Whether you are experiencing yet another snow storm, your children are home from school for February Vacation week, or just because you want something sweet; these recipes using cookie dough as an ingredient are sure to be a hit with your family. The attached video shows you how to easily put together a batch of mouth-watering Cookie Dough Cheesecake Bars. Or, you can try a batch of Cookie Cupcakes that taste like a fluffy chocolate chip cookie.

Cookie Cupcakes

  • 1/2 cup butter, softened
  • 1 egg
  • 1/2 tsp vanilla extract
  • 6 TBSP sugar
  • 6 TBSP packed brown sugar
  • 1 cup, plus 2 TBSP flour
  • 1/2 tsp salt
  • 1/2 tsp baking soda


  • 1 egg
  • 1/2 cup packed brown sugar
  • 1/8 tsp salt
  • 1 cup semi-sweet morsels
  • 1/2 cup walnuts, optional

In a large bowl, cream together the butter and sugars-beat until light and fluffy. Beat in the egg and vanilla. Combine the flour, baking soda and salt; then gradually add it to the butter mixture. Mix well.

Spoon around 2 tablespoons of dough into 12 paper-lined cupcake/muffin cups-filling about halfway. Bake at 375 degrees for around 10 minutes, or until the edges are browned.

Meanwhile, you can prepare the filling. In a small bowl, beat the egg, brown sugar and salt for around 5 minutes. Stir in the chocolate chips as well as the walnuts if you're using them.

Remove the partially baked cupcakes from the oven and spoon a rounded spoonful of the filling into the center of each cupcake. Place in the oven and bake for an additional 12-14 minutes or until a deep golden brown. Cool for 10 minutes before moving cupcakes to a wire rack. Cool completely before serving. Enjoy!
