Oh yeah -- these are some yummy bars! Chocolate and peanut butter are the perfect marriage for this recipe. Originally entitled Peanut Butter and Oatmeal Dream Bars, they definitely take oatmeal to a whole new level. If you’re looking for a sweet treat, you have found it!

If you want to substitute anything in this recipe to make it healthier – better keep looking for another recipe. This recipe, as written, is delicious and well worth every single calorie. These bars are layers of chocolate and peanut butter yumminess that are a perfect reward for watching your calories elsewhere. Indulge!

Chocolate Peanut Butter Cookie Bars Recipe

Ingredients for Chocolate Peanut Butter Cookie Bars:

  • 1 cup butter, melted
  • 1 cup brown sugar
  • 1 tsp. baking soda
  • 2 cups oatmeal (old fashioned works the best)
  • 1 ½ cups flour
  • 1 tsp. salt
  • ½ cup peanut butter, smooth is the best for this recipe
  • 1 can sweetened condensed milk
  • 6 large Reese’s peanut butter cups, roughly chopped (each candy bar has 2 peanut butter cups to equal the 6)
  • 1 cup chocolate chips

Directions for making Chocolate Peanut Butter Cookie Bars:

Preheat the oven to 350 degrees. Line a 9 x 13 baking dish with foil (lightly greased) or line with parchment so that it overhangs on two sides – this will allow you to lift the bars out for easy cutting.

In a mixing bowl, stir together the melted butter, brown sugar, baking soda, oatmeal, flour and salt. Mix it together until it’s crumbly. Set aside 1 cup of this mixture. Pat the remainder of it evenly over the bottom of the prepared baking dish. Bake for 10 minutes. Remove from the oven and let it sit for 20 minutes.

Mix together the peanut butter and the sweetened condensed milk. Drizzle the peanut butter mixture evenly over the cooled crust. Carefully spread it evenly over the crust. Sprinkle the remaining oatmeal mixture over the peanut butter mixture and return it to the oven for 15 minutes.

Remove from the oven and evenly sprinkle with the chopped Reese’s peanut butter candy bars and the chocolate chips. Return to the oven for another 5 – 10 minutes. Allow to cool completely before cutting into squares. Enjoy!
