With the rising cost of protein , ABC reported on October 8, 2013, that more people would like to see more vegetables on the menu and less meat and protein, if it meant it would save them money and be better for their health.
One example they gave was kale. Kale’s popularity has risen by 400% in the last five to six years. Kale can be prepared in many different ways, each creating a different palate. The chef can cook it with chicken or beef, making a stir fry type meal. They can make a fresh salad, using the kale as the lettuce or place it in the juice machine to juice it. They can even make crispy chips with kale. Consumers are starting to realize that vegetables to not have to be boring. This discovery alone, could be the reason for the rise of the vegan and vegetarian trends seen in Americans today.
Sixty five percent of Americans believe that it is very important to eat healthy, and they claim to make every effort to eat well in their everyday diet. One fifth of Americans believes that is possible that chefs can prepare delicious food in a healthy way. Eighty seven percent of those asked believe that fresh foods taste better than processed foods, and wished more establishments offered more fresh food options.
As more people care about the food they put in their mouth, restaurants will have to listen to the consumers and give them healthy options. If they do not listen, the business owners may lose customers, and will lose them rather quickly.
