The Carmel Valley Ranch, nestled inside 400 acres of the Santa Lucia Mountians, in Carmel Valley
When The Friends of the Monterey Symphony invited Conductor Dmitry Yablonsky and his wife Svetlana to be the guests of honor at a luncheon before his performance at The Monterey Sypmhony Orchestra this last weekend, you can be sure that the venue of The Carmel Valley Ranch was selected specifically with Chef Tim Wood in mind to conduct on his end, a soiree of taste sensations to impress their honored Russian guests as well as the locals with his culinary expertise.
Recently chosen by Mr John Pritzker, who is heading up Carmel Valley Ranch's latest renovations and additions, Chef Tim is constructing his own symphony of flavors.
Right now the ranch is under major renovation, with the main lodge currently closed . However, in efforts to serve their patrons, theCarmel Valley Ranch Golf Club is open with a larger kitchen and more diverse menu to serve the local community, and any larger events that aspire to the private party atmosphere that the club, with it's open fireplace mountain landscape views and full bar are known for.
The goal for John Pritzker and Chef Tim is an all new menu that is world class, to suit the world class Carmel Valley Ranch vortex of hospitality. For example the starter on the Friends menu: A Humboldt fog salad with Butter lettuce, candied walnuts Fuji apples, olive oil croutons & tarragon vinaigrette.
From his early days in The Catskills and The Pratt Culinary Institute, to Manhattan's Windows on the World Rainbow Room, and then The Bernardus Lodge under Chef Cal Stamenov direction, where Tim has toured with his culinary team in countries such as Germany, Holland and Spain, landing ultimately as the Executive Sous Chef, The Carneros Inn in Napa for awhile. You can guess the knowledge of his sensibilities and taste buds have no boundaries when it comes to this task, and why John Pritzker has invited Tim to The Carmel Valley Ranch to reign in his kitchen.

- Entree: Fulton Valley chicken breasts with winter ratatouille, Yukon gold potatoes and a roasted garlic jus
Dessert: Chocolate gauche hazelnut moose cake with nut brittle and local berries...
The Friends of the Monterey Luncheon is a great way to get close to such talented people as Dmitry Yablonsky, and to mingle with a crowd of dedicated music lovers. (see slide show)
My suggestion: Forget your day to day issues, (they will still be waiting there the next day).
Allow a fresh breath of air carry you to a world of taste and sound worth living for; The Friends of the Monterey Symphony are waiting with their arms open, and their guest conductors like Dmitri Yablonski are more than happy to give you move your hearts with their inspiration.
Recipe: Fulton Valley Chicken Breast thanks to Chef Tim Woods of Carmel Valley Ranch
4 Fulton Valley Chicken Breasts ( important: not any chicken breast will do!)
- Sprigs of simple garden rosemary
- 4 Cloves of Gilroy (or other fresh) garlic –
- (garlic should be smashed, not minced. or it will burn)
- 1 Cup Extra Virgin Olive Oil
Pan sear chicken and finish in a 350° oven to correct doneness; internal temperature should be 160°
Season with fresh cracked black pepper and Diamond Crystal salt
