Humboldt Farm.Fish.Wine, a beautiful and historic destination for modern, re-interpreted classics and great cocktails, situated at 17th Avenue and Humboldt opens this week under the leadership of Concept Restaurants. Maintaining the architectural integrity and approachable spirit of this beloved iconic location, Humboldt offers honest food done right — with passion and care. The relaxed, classic American dining atmosphere combined with an energetic bar and patio will certainly provide the community a renewed gathering spot with weekend brunches, lunch, dinner and an incredible happy hour. Architect Ken Andrews of Arch 11 and Concepts designer, Dianna Lynn have delivered on Humboldt’s promise.
“From the instant our guests walk in and have that ‘wow moment’ to the time they leave, we want to make sure their experience here is spectacular and memorable,” said Dianna. “Whether you are on top of the ‘Denver foodie’ scene or visiting Humboldt for the first time and looking for an amazing dining experience, we are a welcoming place for everyone.”
Concept, well known for longevity in the market with their successful area restaurants and brands has created Humboldt in a timeless style that accentuates the building’s history, location and individuality. There are 180 seats total, with 30 in and around a U-shaped bar, 40 on the outside patio along 17th Avenue as well as a private dining area in the large atrium. By opening up the dining space, Concept features an energetic and transparent atmosphere full of natural light. The exhibition Oyster Bar and Open Kitchen greets guests from the moment they walk in treating them to a “behind the scenes” working kitchen. With a community kitchen table, guests are offered an insiders view and experience throughout their meal. The energetic bar area is open and inviting and is accented by a luminescent overhead bar lit from underneath with LED lights building on Humboldt’s transparency theme.
“We have thoughtfully planned and re-invented this space to pay homage to the historic and iconic location. From the moment guests arrive and can access our free valet to the start of their Humboldt experience in our newly-designed space, the eatery offers unique concepts paired with classic features,” notes Kevin Brown, COO/Executive Vice President of Concept.
Executive Chef DJ Nagel and Chef D Cuisine Kollin Gately have combined experience from such notable restaurants as North, Bloom, Shanahan’s, Harvest, Whisknladle, Spruce Saddle and more. The team has collaborated on an exciting menu and will be executing their vision of both re-interpreted classics as well as seasonal and modern cuisine. DJ and Kollin’s longstanding collaborations with local farmers, bakers, ranchers and great relationships with coastal fisherman has resulted in menus full of the best possible produce, all natural proteins and sustainable seafood. With an ever-changing Fresh Oyster Menu to signature items such as a Crystal River Colorado Grass Fed all-natural, always fresh beef, to the restaurant’s never ever Vintage Steaks and ocean friendly seafood, Humboldt expresses it commitment to “honest food done right”. Offering both small plates for sharing and sampling, as well as large plates for when you have found the taste that can only be satisfied with a full portion.
“Our chefs’ voice will come through with everything on the menu and the food evokes a feeling of a great treasure, in a wonderful neighborhood spot to be shared by all Denverites,” said Sean Huggard, Director of Operations at Concept. “Our chefs have a special bond. I have never seen two people be so passionate about food — their energy in the kitchen captivates us. It’s this excitement and passion for their craft that has created an exciting menu featuring their vision of both classics with their own twist as well as seasonal and modern cuisine.”
All produce is seasonal and local when possible in order to bring the best, natural flavors forward. Virtually everything at Humboldt is house made or custom, from the sauces and dressings to the locally baked breads. “Humboldt’s menus are an eclectic mix of everything I personally love to eat. We want to create great, flavorful dishes, presented in a modern, approachable way. We never stray far from American classics, but also never miss an opportunity to try a classic in a new way,” explains Chef DJ.
Overseen by the restaurant’s general manager Brion Boyer, Humboldt’s lively and interactive bar offers guests expertly crafted classic cocktails mixed with the finest American-made spirits, featuring local distilleries like Spring44, Stranahan's and Leopold Brothers. Guests can expect to find exceptional Bloody Mary’s, Irish Coffee and Manhattans on the menu, as well as signature Humboldt cocktails and market-driven collaborations between the chefs and bartenders. There is also an extensive craft beer program as well as an eclectic wine menu sourced by Gina Day, Humboldt partner and owner of the state’s first microbrewery and extensive wine connoisseur and traveler. Humboldt’s entire cocktail program pulls from local, national and international selections to pair with the cuisine.
And, as the location has been drawing people together over the course of generations and multiple decades, Humboldt is presenting a daily happy hour from 3-6 pm, Monday-Friday that will ensure generations will continue to gather with a stellar bar menu — all $8 and under! Harrisa Steak Skewers, Smoked Trout Dip, Oysters on the ½ shell for a $1, the Humboldt Burger and over a dozen more items are featured. The $6 cocktail list includes incredible fusion cocktails inspired internationally: The Cucumber Gimlet, Singapore Sling, Pimms Cup, Horsefeather and French 75 only reflect a small breath of the bar’s vast cocktail span.
