Company's Coming Tonight


Give the bacon a head start and render the fat in a frying pan.

Kelly from Arlington, Texas emailed me asking for ideas for quick, easy to prepare hors d’oeuvres for when he and his wife are entertaining. Maybe you’ve invited some neighbors over tomorrow night or you’re hosting the boss and his wife for cocktails – either way, pick some favorite CDs to set a relaxed mood for great conversation, chill the wine and watch these little bites disappear!

 Pomegranate Glazed Bacon Wrapped Scallops

12 fresh sea scallops, cleaned (check out Kitchen Tip Q for scallop cleaning tip)
12 strips applewood smoked bacon
½ cup pomegranate syrup (or reduced juice*)
salt and pepper, to taste
Preheat oven to 375 degrees. Heat a large saute pan and add bacon slices. Cook for three to four minutes on each side to begin rendering some of the fat. Do not cook it all the way through until crispy – just give it a head start since it takes longer to cook than the scallops. Remove bacon and drain on paper towel.
In a large bowl, toss scallops in pomegranate syrup and wrap each scallop with one slice of bacon and secure with a toothpick if necessary. Sprinkle with pepper on both sides and salt if desired. Remember, the bacon is salty so it won’t require much.
Place each scallop on a foil lined sheet pan in a single layer, drizzle with remaining pomegranate syrup and bake for 10-12 minutes until scallop and bacon are cooked through. Remove toothpick and arrange on a platter. Bon appétit!
* To reduce or concentrate pomegranate juice, pour 1 cup of juice into a sauce pan and simmer, uncovered, on medium heat until reduced by half, about eight to ten minutes.
