Comfort food and wine pairings Northeast Wisconsin style

The winters here in Northeast Wisconsin, NEW to the locals, can be lengthier than even in the southern part of the state. In a growing number of NEW kitchens, winter frequently calls for comfort food with a great bottle of wine. Here is a simple recipe for braised short ribs that will awe even the foodiest of you foodie friends time after time.

An excellent choice for pairing with braised short ribs is Chateauneuf-du-Pape (CDP), a French wine from the Southern Rhone region of France. CDPs are a blend with the backbone of the wine usually being the Grenache grape. Another 12 grape varieties are added, including Syrah and Mouvedre to create this elegant wine. Here in NEW, some easily found and moderately priced bottles are Guigal Chateauneuf Du Pape Rouge, and M. Chapoutier Le Bernardine Chareauneuf-du-Pape.
