Who says all soups must be served hot out of the frying pan/pot and contain a mouthful of vegetables? Gazpacho, Cucumber soup, fruit soup, Ajoblanco, Che, and Borscht are all great variation of cold soups to try (and some of them even contain fruits in replace of veggies). Cold soups test the limits of any traditional soup and are a great addition of variety to anyone stuck in a rut eating the same old thing.
