The sweltering hot day of late summer are causing me to crave cold dishes: salads, cold soups, and cold noodle salads. The cold noodle salad is my go-to dish when I need something fast, yummy, and healthy.
You can put just about any veggies in this dish. I love it with bean sprouts though. Bean sprouts are crunchy and taste so clean and refreshing.
1 x 10-12 oz pkg dried rice noodles
1 x 12 oz pkg bean sprouts
1 carrot, shredded
1 green onion, minced
any other veggies you already have, shredded
3 T vinegar
1 T soy sauce
1 t sesame oil
pinch of salt to taste
1. Boil noodles in boiling water till cooked through. Rinse well in cold water, so noodles don't stick together.
2. Add veggies to noodles.
3. Pour sauce on noodles and veggies.
4. Toss to mix well.
Leftover will keep in the refrigerator for several days.
