Blueberry muffins are delicious, but no body has the time to make up a fresh batch when the craving hits.
Yup, believe it. It can happen.
- 1/4 cup oats
- 1 egg
- 1 tsp brown sugar
- handful of blueberries
- splash of milk
- dash of cinnamon
Mix all of the ingredients together, and pour into a coffee mug. You can spray the inside of the mug with non-stick spray if you wish to remove the muffin from the mug after cooking.
Microwave for two minutes. Done.
Enjoy your blueberry muffin from your mug with a spoon, or remove it from the mug. The uniquely shaped muffin makes for great plating.
Serve alone, or with eggs, bacon, or fruit on weekend mornings.
