No matter how careful a cutting board is handled, eventually something will require a major scrubbing. In this instance, it is mainly pasta that got damp. The problem is that wood and water don’t always get along that well together. The water can warp or split the board if it is not handled properly.
Naturally, the first step is to get the board clean. Mild soap and warm water are best, as well as a nylon sided sponge. Anything more abrasive could damage the board or leave bacteria behind.
Once that is done, it needs to be dried thoroughly. A linen dish towel works best. Hand towels don’t have the moisture absorbency required to get the water off the board as fast as possible.
The last step is the most important. The application of food grade mineral oil will protect the board and prevent water damage from ruining it. Squirt a generous amount onto the board and rub it in with a paper towel or dish towel. Don’t forget the sides and back, as they will have gotten wet as well.
The hardest part about this step is actually finding the oil. In Simi Valley, Bed, Bath and Beyond usually carries a supply in the kitchen section. If there are difficulties locating it, ask for Keith. He’s worked in that section for years and knows it quite well.
