Classic buttercream icing

Have you ever heard the expression ‘the icing on the cake’? It’s true, the icing can truly make or break a cake. Think back to an absolutely gorgeous cake or cupcake you looked at only to be disappointed by an overly sweet, lardy or tasteless icing when you took a bite. And this disappointment, when a great looking dessert tastes horrible, is something you want to avoid serving your guests.

Here is a simple yet totally scrumptious classic buttercream icing you can use to top cakes, cupcakes or cookies. So go ahead and wow your guests with great looks and great taste!

Ingredients:

1 cup butter, room temperature
3-4 cups icing sugar, sifted
3 tsp pure vanilla extract
4 tbsp milk

Directions:

1. Beat butter for 2 minutes with a mixer with the paddle attachment on medium speed until fluffy. Turn mixer off.
2. Add 3 cups of sifted icing sugar and turn your mixer on at the lowest speed until the sugar has been incorporated with the butter.
3. Increase mixer speed to medium and add vanilla extract and 2 tablespoons of milk. * If you are colouring your icing, add the colour at this step for even colour.
4. Beat for 3 minutes.

For a stiffer icing, add more sugar until you reach the consistency you would like. If your icing needs to be thinned out, add milk 1 tablespoon at a time and beat until desired thickness is reached.
