
As long as I can remember, my family has always made these on Christmas Eve! They started out as stuffed clams many years ago and evolved into clam balls!
Clam Balls
- 1 can of diced clams**
- 1 can of breadcrumbs
- 2 teaspoons of lemon juice
- ** Reserved clam juice from can
- Salt
- Pepper
Combine crumbs, clams, lemon juice, salt and pepper into a large bowl. Then, add clam juice until mixture is moist (making sure it is not watery). Form mixture into small, bite size balls with your hands (similar to the way you would make meatballs). Place balls onto a cookie sheet lined with aluminum foil.
Bake your clam balls at 325° for about 15 to 20 minutes.
