Sylvester Graham was a stoic man. He lived in the time of Hawthorne, Longfellow and Poe. A Presbyterian minister he advocated a life of temperance and sexual restraint. A diet of vegetarianism featuring whole wheat flour was promoted by Graham who also suggested refined foods were linked to the inability to fight off disease. His lectures, which focused on curbing carnal inclinations, captivated thousands. His many followers were know as "Grahamites" who followed his "Graham Diet."
The graham cracker was one of his creations, utilizing whole wheat flour. It was meant to be satisfying and aid digestion. Graham ended is days nearby in Northampton, MA. Today the house is occupied by Sylvester's Restaurant, a local institution know for it's wholesome food, as Graham would have advocated. Maureen McGuiness of Sylvester's was interviewed in TV Dinner's. In it she talks about their commitment to homemade goodness.

For this recipe we have chosen an organic red wheat flour grown and milled locally in Gill, MA, at Upinngil. It is wholesome, flavorful, and prepared ethically. Sylvester Graham himself would surely have been a convert to this local treat.
1/4 cup local honey
1 cup white sugar
1 egg
1 1/2 tbsp molasses
2 1/4 Organic Whole Red Wheat Pastry Flour
1 tsp baking soda
1 tbsp Russian Mulling Spice (a locally made cinnamon based spice)
Preheat oven to 350 degrees F (180 degrees C). Cream together butter and sugar. Mix in egg and molasses, blending well. Mix flour, baking soda, cinnamon and Russian Mulling Spice; add to
creamed mixture, mixing well. 5 Drop by teaspoonfuls onto ungreased cookie sheet. 6 Bake for 10 to 12 minutes.
