Nutty and slightly chewy, these good for you pancakes will have your family at the breakfast table in no time.  You can find wheat germ in bulk at the Swiss Pantry on Winchester highway.

Cinnamon Oatmeal Pancakes


  • ½ cup milk
  • ½ cup quick cooking oatmeal
  • 2 tablespoons butter, melted
  • 1 egg, beaten
  • 2 tablespoons honey
  • ¼ cup flour
  • 1 tablespoons wheat germ
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • ½ teaspoon salt


Heat up the milk and pour over the oatmeal. Let the oatmeal soak. In a medium mixing bowl, sift together the flour, baking powder, salt and cinnamon. Stir in the wheat germ. To the oatmeal, stir in the butter, honey and egg. Pour over the dry ingredients and mix lightly. The batter will be thin. Pour by ¼ cupfuls onto a lightly oiled hot griddle. Bake on the griddle until the tops are full of bubbles and the bottoms are lightly browned. Turn and brown the other side. As the cakes finish, place on a warm plate and put into a 200 degree oven to keep them warm. Serve with your favorite pancake toppings.
