Cinnamon bun cookies

Combine your favorite breakfast pastry with dessert and you’ve got a definite crowd-pleaser.

Cookie Ingredients
½ cup powdered sugar
¾ cup butter, unsalted
½ tsp. salt
1 ½ tsp. vanilla
1 ½ cups flour

Filling Ingredients
1 egg white
1 tbsp. water
¼ cup sugar
1 ½ tsp. cinnamon

Icing Ingredients
½ cup powdered sugar
2 tbsp. heavy cream
½ tsp. vanilla
½ tsp. cinnamon

In a mixer, cream together the sugar and butter. Add in the salt and butter. Slowly beat in the flour until well combined. Chill for at least 1 hour. Once chilled, roll into a 9x12 rectangle. Beat together the egg white and water, then spread across the dough. Mix the cinnamon and sugar together then sprinkle this over the dough. Roll the dough into a log and chill for one more hour. Preheat oven to 350º. Remove the chilled dough and cut until ½ inch slices. Bake for 12-15 minutes. While the cookies are cooling, prepare your icing. Combine the icing ingredients in a mixer and spread over the top of the cookies. Serve and enjoy!
