Can there be more than 4 stars - because these cookies are so delicious (and easy and nutritious and...) - they deserve it!
Cinnamon & Banana Oat Cookies
- 2/3 c non-dairy butter
- 1 ½ c cane sugar
- ½ c almond milk
- 1 banana
- 1 tbsp flax seed
- 1 tbsp nutritional yeast
- 2 tbsp ground cinnamon (or to taste)
- ½ tsp fine sea salt
- 2 tsp vanilla extract
- 2 ½ c old fashioned oats
- 1 c whole wheat pastry flour
- 2 tsp baking powder
- 2/3 c raisins or carob chocolate chips (or both!)
Preheat oven to 350F.
Mix together butter, sugar and mashed banana.
Add milk, cinnamon, salt, vanilla, flax seed and yeast.
In a separate bowl, combine oats, flour and baking powder.
Add dry ingredients to wet and mix in the raisins or carob chips.
Bake for 16 minutes.
