Christmas tree pinwheels

Ingredients
4 spinach flat bread slices, halved
1 package (8 oz) cream cheese
½ cup pesto
¾ cup carrots, shredded
1 lb. baby spinach
2 tbsp olive oil
2 tsp. honey
½ tsp. salt
½ tsp. pepper
2 cups red cabbage, shredded
½ lemon, juiced
1 yellow bell pepper

Instructions
First create a cabbage salad by combining the cabbage, honey, lemon juice, and olive oil. Add salt and pepper to taste. Make sure the cabbage is well-coated. Next, start forming the pinwheels. Spread the cream cheese over the flat bread halves. From here on, make sure that the toppings don’t get within 1 inch of the edge so that it can be rolled easily. Add a layer of pesto, a layer of carrots, and a layer of the cabbage salad. Top with a layer of spinach. Roll tightly and press against the edge for at least 10 seconds to make sure that it sticks. Roll them so the seams are against your surface, and cut off ½ inch from each side. Then cut into 5 pieces per log. As you cut, transfer them onto your serving platter and arrange in a tree shape. Lastly, create your star with by cutting the shape out of the pepper. You can also do this with a star fruit (or carambola) if you’d like to skip the work of cutting out a star shape. Place it on top of your pinwheel tree and serve to your eager guests!
