Christmas thin mints

See also

Now that I have two babies to take care of, it's a little more difficult to bake and make Christmas cookies. I still wanted to make something to hand out to the neighbors with our Christmas cards, but I needed to find something that would be fast and easy to make while my son was napping. I saw this recipe for Thin Mints, and it was just what I was looking for.

This recipe couldn't be easier. You only need three ingredients: chocolate, Ritz crackers and candy canes. Plus it is no bake, all you need to do is melt some chocolate! The end result is a nice treat that is crunchy, sweet and a little salty. Plus, it has just a hint of mint that is perfect for the holidays.

Christmas Thin Mints (recipe adapted from Snackworks)

2 pkg. (4 oz. each) semi-sweet baking chocolate, melted, slightly cooled
36 RITZ Crackers
1 candy cane (6 inch), crushed

Dip crackers in chocolate, turning to completely coat each cracker. Carefully scrape off excess chocolate. Place crackers in single layer on waxed paper-covered baking sheets; sprinkle with crushed candy.

Refrigerate 30 min. or until chocolate is firm.
