Christmas cookies: Chocolate filled cookies

Christmas is near! Time to start baking cookies and making candy. Homemade is the best when it comes to Christmas cookies and candies.

The cookie recipe below is easy and is a recipe children can help with.

Chocolate Filled Cookies

Ingredients:

  • 1/4 c. shortening
  • 1/2 c. white sugar
  • 1/4 c. brown sugar
  • 1 egg
  • 2 tsp. vanilla extract
  • 1/2 tsp. almond extract
  • 1-3/4 c. all-purpose flour
  • 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 c. almonds or pecans (ground up)
  • 3-1/2 to 4 dozen milk chocolate kisses

Directions:

Preheat 350 degrees. Use electric mixer to cream shortening and sugars until fluffy. Add egg, extracts; beat well. Add flour, baking powder, salt and nuts; mix until blended.

Form dough into 1-inch balls. Press each ball around a chocolate kiss so it is completely covered. Place on ungreased cookie sheet 2-inch apart, bake for 12 minutes (make sure not to overbake).

Place cookies on wire racks to cool. Frost with chocolate frosting or roll in powdered sugar. Makes 3-1/2 to 4 dozen cookies Store in tightly closed containers.

You can purchase small Christmas decorated boxes, line with tissue paper and place a dozen of cookies in the box for great Christmas gifts!
