Also, this dough is a workout! With all that flour that needs to be mixed by hand, you can get all that holiday stress out.
6 cups flour, sifted
1 1/2 cup sugar, sifted
1 cup butter, softened
1/2 cup milk
3 tablespoons baking powder
2 teaspoons of vanilla
Zest of 1 lemon, plus the juice
Beat the eggs well. Fold sugar in gradually, then the butter. Beat well. Fold 1/2 cup milk and lemon zest and the juice and two teaspoons of vanilla.
Gradually fold four cups of the flour and baking powder. After the 4 cups of flour are added, you need to add 2 more cups of flour gradually. At this point, you have to mix the dough by hand. You may need 1/2 cup more flour. The dough is just right when it falls off your hands and does not stick.
Shape cookies to form an S about 2 inches long.
Bake at 350 until light brown on a cookie sheet, 15 to 20 minutes.
Remove and finish browning the cookies under the broiler for 5 minutes or until browned to your liking.
Mix together: 1 stick of butter, 3 cups of confectioners sugar and 7 teaspoons of milk.
Divide frosting into three small bowls. Leave one bowl of white frosting. Make chocolate frosting by adding 2 teaspoons of cocoa.
Make the last bowl of frosting pink by adding just a drop or two of red food coloring. Or for a holiday look use green.
