The Hershey Company – the makers of Rolo candies – now make Rolos without the wrappers. If you’re looking for a way to make this easy recipe even easier, look for the Rolos that are unwrapped. They are just a little smaller than the wrapped version, but they are the perfect size for these cookies.
If you want to make this recipe a bit more special, butter your pecans and toast them first. If you buy the unsalted version, you could even add a little (just a little) salt to the pecans right after they are toasted. (Just toss 1 ½ cups pecan halves with 2 tablespoons of melted butter, then spread the pecans in a single layer on a cookie sheet and place it in a preheated 350 degree oven – toast for 5 – 7 minutes or until aromatic.)
