Christmas Mints

  • 1 – 3 oz. pkg. cream cheese (room temperature)
  • 1/4 to 1/2 tsp. mint flavoring
  • Food Coloring
  • 2-1/2 to 3 c. powdered sugar

In mixing bowl stir together cream cheese, flavoring until smooth. Add powdered sugar a little at a time and mix thoroughly with electric mixer. Then hand knead mixture until smooth and thick.

Divide mixture into 2 or 3 portions. Add food coloring to two portions (red, green), the 3rd portion can be left white. Hand knead until coloring is smooth. Roll into the size of marbles, roll into granulated sugar, then press with fork tines or press into small candy molds. Place on cookie sheets covered with parchment or wax paper. When firm place mints on cookie racks to dry. Store in airtight container. Make 6 dozen.

For lovely little Christmas presents for co-workers purchase small glass jars and fill with mints, add decorative ribbons, bowls and other decorations. If you want you can include a mini card with the recipe.
