This dish has a nice kick to it. Chorizo is sausage made from pork and pork fat and is seasoned with paprika. The sausage itself has a little bit of a spicy flavor to it. So, take the sausage and combine it with a dash of cajun seasoning along with a few other ingredients in this recipe and you have a wonderful dish!
Chorizo with Red Beans and Rice
- 2 tbsp olive oil
- 1/2 onion, peeled and chopped
- 1 pkg Chorizo (uncooked), casing removes and sliced into 1/2 inch rounds
- 2 tbsp garlic, minced
- 1 tsp cajun seasoning
- 1 can diced tomatoes in juice
- 1 cup beef broth
- 1 can red beans, not drained
Basmati rice, cooked per package directions, using the remainder of the beef broth from the can and water.
Warm oil in a no-stick pan.
Add onion and garlic and cook until browned.
Add seasoning.
Add tomatoes with juice.
Turn on high and boil.
Add broth and beans with liquid.
Boil until it thickens, stirring often about 20-30 minutes.
While mixture is thickening, cook sausage in 2 tbsp olive oil in a no-stick pan on medium heat. Cook until well browned and each piece is cooked through.
Add meat to sauce when it is completely cooked and let it cook in there until sauce is thickened.
Serve over rice.
