Tuesday night's episode of "Chopped" offered four more chefs an opportunity to compete for the $10,000 and the very elusive title of a champion in this episode where they were given items in three mystery boxes in this episode titled, “Swai Not?”
Competing in this episode are: executive chef for the Blind Barber, Ted Hirsch, chef and owner of three restaurants in Brooklyn, Josh Cohen, chef de cuisine at Jamonera in Philly Lindsay McClain and executive chef at Saffire Restaurant in Franklyn, Tenn., Vinny Tardo.
The first round appetizer mystery box contained: Falafel Mix, Chicory, Habanero Peppers and Date Paste. Josh made sautéed chicory with fried falafel using onions, lemon and olive oil. Lindsay made falafel with herb buttermilk dressing using lemon, scallions and basil. Ted made spicy falafel-seasoned mushroom tacos using shallots, garlic and tortillas. Vinny made wilted chicory bread salad with falafel vinaigrette using baguette and white wine. The chef eliminated from this round was Ted because his date puree was not repurposed.
The entree round contained: Mostarda, Swai Fillets, Chicken Livers and Turnips. Vinny made pan-seared swai with chicken liver mousse using onion, garlic and sweet potato. Lindsay made chicken liver mousse with pan-fried swai using cognac, buttermilk and flour. Josh made baked swai fillet with liver and onions using onions, lemon and olive oil. The chef who was "Chopped" in this round was Vinny because his liver was overcooked.
The dessert round included: Carob Molasses, White chocolate Chips, Nougat Biscuits and Raspberries. Lindsay made carob molasses ice cream using milk, sugar and eggs. Josh made panna cotta using heavy cream, gelatin and cardamom.
The winner of the $10,000 and "Chopped" champion was Lindsay who will use the money to help buy a house and start a family!
