Chop Shop Casual Urban Eatery, a refined casual American grill with a global influence, is opening in Denver’s thriving East Colfax neighborhood at 4990 East Colfax in Denver. The innovative fast-casual concept is to be Colorado’s newest presentation of quick service meets casual market that is rooted in desires to only serve the freshest ingredients, highest standards and inventive techniques. Customers can enjoy a quick healthy and local lunch or dinner to go, and also a comfortable, yet sophisticated space for patrons to linger for a tap beer or pour of keg wine. All of this is to be combined with the perfect amount of service within a comfortable and accessible environment.

Owner and Executive Chef Clint Wangsnes brings such a diverse blend of his coastal training in Florida, California, Oregon and Hawaii, and combines these adventures with Asian and Mexican influences from nearly a decade of service with famed chef and restaurateur Richard Sandoval. His fusion influences are immediately, and ever-present in many of the Chop Shop’s signature dishes.

“Chop Shop has been a true labor of love and the result of an idea I had three years ago after my daughter, Luella was born,” said Chef Wangsnes. “I wanted to create a casual, comfortable, yet upscale and innovative eatery for my now familiar family demographic. The addition of my son helped propel the need for seriously good protein and sides of a high-end steakhouse, but in a relaxed and price-appropriate manner. The result can be found in the uniquely transpired space that is today’s Chop Shop.”

Chop Shop is the very first “skillfully crafted, quickly served” food venue of its type in Denver. The menu is seasonally crafted and prepared by chefs with a focus on clean and healthy eating, with an expansive kids menu. The steakhouse concept heavily influences the menu selections, but not the price. That’s the rarity of Chop Shop. The availability of incredible burgers, steaks, and pastramis, slow cooked meats, potatoes and endless vegetables with fusion flair. Chop Shop also has a certified sous-vide program, which is unlike any other fast-casual restaurant in Denver. This style of cooking is often found in fine-dining establishments.

The meals focuses around a protein served as a side, and two gorgeous sides as the centerpieces such as a 48-hour slow-cooked short rib with grilled baby carrots and whipped potatoes in a 3-peppercorn Hoisin demi glace. From incredible garden chop salads with brilliantly spiced and seasoned proteins to soups and kid combination plates, the menu is new, but infused with classic American root vegetables and favorite cuts of meat, chicken and fish. Additionally, there is a tasty selection of craft beer, wine and a seasonal cocktail as well as all natural cane sodas and much more.

“We provide simple ingredients, presented in a beautiful, clever plated temptation that truly spotlights the “skillfully crafted, quickly served” approach of the Chop Shop,” said Chef Wangsnes. “With partnerships with local purveyors like Boulder Natural Chicken and Infinite Monkey Theorem, we work to bring local, seasonal and organic ingredients to our customers whenever possible.”

Famed Executive Chef Clint Wangsnes co-owns the community-rooted eatery with Christian Anderson, expert beverage consultant and general manager. Together this pair, with the team of Derek and Elizabeth Nelson of Rock Springs Development & Design have designed a rustic, yet modern environment.

Derek and Elizabeth Nelson of Rock Springs Development & Design have fashioned a space like no other in Denver for a fast casual / quick serve restaurant. Pops of orange and green infused with natural colors and elements equals’ one community-oriented eatery on East Colfax. A large garage door, abundant outdoor patio seating (20) and a large, open 40-seat location lend the Chop Shop’s design to a familiar, yet exciting food and beverage landscape.

Chop Shop Casual Urban Eatery is open daily from 11:00 a.m. until 10:00 p.m. The menu is seasonally crafted and prepared by chefs with a focus on clean and healthy eating, with an expansive kids menu and daily specials. Online ordering and take out is available.
