Many salads are prepared with iceberg or romaine lettuce. These are great choices but there are many others that no one thinks of adding to salads, soups or preparing as a side dish that provide even more health benefits and phytonutrients and antioxidants.
It all depends upon the types of leaves the greens contain. The looser the leaves and the deeper the color the more health benefits can be derived from the goodness of greens in your diet.
Some healthy greens that get overlooked and are good for you are: radicchio, mustard greens, arugula, Asian greens, baby spinach, Bibb lettuce, Oak leaf lettuce, Savoy cabbage, beet greens, chervil and cilantro.
Be sure to wash all greens thoroughly under cool water before preparing them in salads or recipes. Shake off excess water and either; pat them between paper towels or use a salad spinner.
Even prepackaged greens are good for you. They come already washed and chopped and are very convenient to use. Some packages contain a variety of greens so you don’t have to purchase many different types separately. These packages also contain fresh greens and contain phytonutrients for healthy dishes.
Remember when purchasing prepackaged greens to look closely to the edges of the leaves. If the leaves have discolored or started to wilt they have been on the shelf too long and should be passed up for another package that contains crisp greens.
Healthy choices, healthy and deeply colored greens will make your healthy living diet more beneficial!
