2 eggs

2 teaspoons of vanilla extract

1/8 teaspoon of salt

1/1/2 cups of pecans coarsely chopped

½ cup of flour

¼ cup of sugar

½ cup of dark corn syrup

½ bag of semi sweet chocolate chips

3 Tablespoons of butter

16 pecan halves

Directions: Preheat the oven to 325 degrees. Line the bottom and sides of an 8-inch square baking pan with wax paper and grease lightly. Or, you may spray bottom and sides of pan with olive oil or canola oil. Whisk the eggs, vanilla, and salt in a small bowl and set aside. Also, in another bowl, mix pecans and flour and set this bowl aside as well. In a medium sized saucepan, bring the sugar and corn syrup to a boil. Remove from the heat and stir in the chocolate chips and butter and blend with a wooden spoon. If needed, blend on low heat, if butter is cold and not melting quickly. Next, mix in the beaten egg mixture and the pecan flour mixture and continue to blend well. Next, pour the batter into the prepared pan, add a few pecans to the top as garnish, about 16 and bake until set. If toothpick comes out clean, then the Chocolate Pecan Squares are ready, about 35 minutes in the oven. Cool for about ten minutes and then cut into squares, can top with additional pecans or powdered sugar.
