Looking for a good homemade gift idea? These chocolate mints are fantastic for anyone who loves to bake and give their goodies as gifts are cookie exchanges! I make this lovely holiday candy every year. This easy fudge recipe features a minty white chocolate filling encased by two delicious layers of mint-chocolate fudge.
What You Need:
(Makes: about 2 pounds or 64 servings)
2 cups (12 ounces) of semisweet chocolate chips
1 can (14 ounces) of sweetened condensed milk, divided
2 teaspoons of vanilla extract
6 ounces of white candy coating, coarsely chopped
2 to 3 teaspoons of peppermint extract
3 drops of green food coloring
What to Do:
STEP 1) In a heavy saucepan, melt chocolate chips with 1 cup milk. Remove from the heat; stir in vanilla. Spread half into a waxed paper-lined 8 inch square pan; chill for 10 minutes or until firm.
STEP 2) Meanwhile, in a heavy saucepan over low heat, cook and stir candy coating with remaining milk until coating is melted and mixture is smooth. Stir in peppermint extract and food coloring. Spread over bottom layer; chill for 10 minutes or until firm.
STEP 3) Warm remaining chocolate mixture if necessary; spread over mint layer. Chill for 2 hours or until firm. Remove from pan; cut into 1 inch squares.
STEP 4) Happy Holidays & Enjoy!
