Substitute oat flour for regular white flour and your cookie will have a nutty flavor without any added fat. Baked goods made with oat flour can usually be prepared with less fat and still have a satisfying texture.
Using a dark brown sugar, and double the amount of vanilla flavoring, will give the cookies a strong sweet flavor and allow you to cut the amount of sugar in half.

Oat Flour Chocolate Chip Cookies
- ½ stick softened butter (or organic palm shorting)
- ½ cup oat flour
- ½ cup regular unbleached all purpose flour
- 6 tablespoons dark brown sugar
- ½ tablespoon good vanilla flavoring
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 egg
- ¾ cup mini semi sweet chocolate chips
- ¼ cup milk chocolate chips
Cream butter and sugar together till creamy
Add egg and blend until fluffy
Add vanilla flavoring blend just until combined
In separate bowl
Combine oat and regular flours, salt, baking soda and all chocolate chips stir together with whisk or spoon.
Add dry ingredients to wet and blend until just combined.
Drop teaspoon sized portions onto greased baking sheets.
Bake for 7 to 10 minutes at 375 degrees.
DO NOT over bake!
