You can make this recipe on your stove top and never have to start your oven. The original recipe comes from, "The Cookie Bible". This version is very close to the original with just a couple of tweeks made to it.
Chocolate Filled Oat Bars
- 2 sticks butter
- 1/2 cup brown sugar, packed
- 1 1/2 tsp vanilla
- 3 cups oats
- 1/2 cup semi sweet chocolate chips
- 1/2 cup milk chocolate chips
- 1/2 cup creamy peanut butter
Line 9x9 baking dish with no-stick foil.
Melt butter in a non-stick pot over medium heat.
Add sugar and vanilla.
Mix until melted.
Stir in oats.
Turn heat to low and cook for 2 minutes.
Press half of oat mixture into the bottom of the prepared pan.
Set aside.
Melt chocolate in microwave for 30 seconds, remove and stir, melt for 30 more seconds, remove and stir. If chocolate is still not completely melted, put back in for 10 seconds and stir.
When melted, stir in peanut butter.
Pour over oat mixture that has been pressed into the pan.
Crumble remaining mixture over chocolate and press into chocolate.
Chill for 4 hours or more, remove and slice into 1 inch squares.
